These superfood balls are an antioxidant powerhouse of essential proteins, nutrients and minerals making them a perfect option for a healthy snack. Once you have the base recipe you can create your own versions of this by adding different nut varieties, seeds and superfood powders such as Acai, Macqui, Maca or Lacuma.
Method - Powerballs
- Place all the ingredients in a food processor and whizz for 30 seconds or more, depending on the strength of your processor. If the mixture seems too thick to easily form into balls, add 1⁄4 cup water and whizz again.
- Roll teaspoons of the mixture into little balls using your hands.
Tip: ‘LSA’ is ground linseed, sunflower seeds and almonds — a major nutrient hit!
Method - Coating
- Combine the chia seeds, coconut, almonds and goji berries in a large bowl and give them a good mix-up.
- Roll the balls in your topping mix to coat and place half in the fridge for munching over the next few days, and the rest in a plastic container in the freezer for another time.
